I recently had the pleasure of visiting Kuma no Yakitori located in Rain Hill, Bangkok. It wasn't just a dinner; it was a masterclass in how culinary traditions can evolve when they cross borders.

As for the food—it was exceptional. Each skewer was a testament to precision.
• The Yakitori: The texture and flavor profile were world-class.
• The Wine: The wine pairings were thoughtfully curated, elevating the smoky notes of the charcoal-grilled poultry to a whole new level.


One of my biggest takeaways from the night was the realization of how well Thai poultry complements Japanese technique. Thailand produces incredibly high-quality chicken, and when you apply the meticulous, time-honored "waza" (skills) of a Japanese master, the result is nothing short of spectacular.
It is a reminder that when the best ingredients meet the best techniques, regardless of origin, something truly special happens on the plate.
